Baked Bacon Shrimp Dip Topped With Avocado & Onions
1 lb shrimp, finely chopped
4 Tbsp reduced fat bacon bits
1 avocado, mashed
1 onion, finely chopped
1 tomatoes, finely chopped
4 - 1" cubes your favorite cheese
Preheat oven to 375*. Olive oil spray your baking dish. I used my food processor to combine the shrimp and bacon bits, pulsed til shrimp was finely chopped. Spread the mixture on bottom of baking dish. Next, I pulsed the onion and avocado in the food processor then layered on top of the shrimp. Now pepper the top of the avocado mix til your desire. Place the chopped tomatoes on top of the mix. Then place the 4 chunks of cheese on top / middle of dip. Cover loosely with foil, bake 25 minutes. Serve with your favorite crackers and celery. DELICIOUS!
