Ingredients


2 Cups Tomato Sauce
1 Tbsp Basil
1 Tbsp Chopped Garlic
2 Stalks Celery Chopped
2 Pound Eggplant Peeled And Sliced Into 1" Rounds
Olive Oil
4oz. Reduced Fat Feta Cheese Diced
2 Chicken Breasts Cooked Chopped
1 Large Red Onion Chopped
8 oz Roasted Red Pepper Drained
Pepper
1/4 Parmesan Grated



Recipe Mix


Preheat oven to 350*. In small pot simmer the tomato sauce with the basil, garlic and celery. While that is simmering, olive oil spray your 9 x 13 baking dish and place the eggplant on bottom of dish. Next, drizzle 2 Tbsp. of olive oil over eggplant and evenly spread the feta onto each piece. Evenly layer the chicken on top of the feta. Now add the onions and red peppers then lightly pepper. Pour the seasoned tomato sauce over dish. Sprinkle the parmesan cheese over dish. Place in preheated oven, bake 40 minutes or until hot. A delicious low fat cooking recipe. Enjoy!
