Baked Veggie Spring Rolls

Ingredients


1 package Spring Roll Rice Wrappers
1 can water chestnuts, chopped, drain, rinse well
1 bunch of green onions, chop green part of onion (save white part for another recipe)
1 avocado, peeled, chopped
2 cups cucumbers, chopped
pepper
dipping sauce, your choice
wasabi
ginger
dipping sauce, your choice



Recipe Mix


Preheat oven to 425*. Line your baking sheet with baking paper and lightly olive oil spray. Follow package directions to prepare your rice rounds/wrappers. Lay the rice wrap on a damp clothe and take a bit of each, chestnuts, onions, avocado and cucumbers and lay across the center of wrap. Fold wrap sides in, and roll wrap up carefully, they don't have to be perfectly shaped. Place wrap on baking sheet, and once you have all your wraps all made, sprinkle pepper on top of each, now bake for 25 minutes. Wraps should be golden brown and crispy. I made 8 rolls with this amount of ingredients. Serve with wasabi and some ginger and your favorite dipping sauce, DELICIOUS!!
