Beer Can Chicken

Ingredients


2 - 4 lb Roasting Chickens
Olive Oil
4 Tbsp. Minced Garlic
2 Cans Of Your Favorite Beer
1 Large Onion

Spicy Rub Recipe:
2 Tbsp garlic powder
2 tsp paprika
1 Tbsp cumin
1 tsp pepper
1 tsp cayenne pepper
1/2 cup olive oil
Mix all the ingredients together in a small bowl.

Remove giblets and neck from inside of chicken, rinse and pat dry. Next rub olive oil all over each chicken, and then rub the garlic all over the chickens, under skin too. At this time, you also want to rub chickens with your favorite spices. Don uses his spicy rub, see above. Open beer cans and take several gulps, haha, each can should be half full. Gently place the bird cavity over the beer can. Next, slice the onion in half and place on top of each chicken (in the neck cavity). Cook the chicken over medium-high, indirect heat (coals placed to each side of grill, not under chickens) with the grill cover on, for approximately 2 hours or until the internal temperature reads 165 degrees F in the breast area and 180 degrees F in the thigh. Remove from grill and let rest for 10 minutes before carving.

*** Pour any leftover rub into beer cans before placing chicken on top of cans.
