Gluten-Free Fruity Oat Muffins

Ingredients


6 cups regular oats, grind into flour
3 tsp baking powder
4 tsp cinnamom
3 eggs
2/3 fat free milk
12 oz unsweetened applesauce
2 Tbsp raw honey, microwave for 40 seconds
1 Tbsp vanilla
1 cup raisins
3 ripe bananas
1 cup black raspberries
Splenda, optional



Recipe Mix


Preheat oven to 350*. Olive oil spray 2 - large 6 count muffins pans. In large bowl mix the flour, powder and cinnamon. In small bowl mix the next 5 ingredients til blended, now add to flour and mix well. Texture will be thick not runny. Now add raisins, bananas, black raspberries and mix by hand til blended well. Scoop the mixture evenly into your muffin pans, scoops should be around the size of a lime. Bake for 24 minutes, then lay a sheet of foil over each pan, do not seal sides, and bake for another 8 minutes. Remove, pop from pans and let cool. You can sprinkle with Splenda if you want to add some sweetness to the taste. These came out nice and moist, DELICIOUS!!
