Slow Cooker Chicken Salad

Ingredients


4 boneless chicken breasts
1 Tbsp pepper
1 cup water
1 large head of lettuce, remove stem, chopped
8 stalks celery, chopped
1 large sweet onion, chopped
1 can of chickpeas, rinse / drain well
8 oz mushrooms, chopped
Handful dried cranberries
4 Hard boiled eggs, sliced





Recipe Mix


4 Salads:

Olive oil spray slow cooker and set temp to low. Place chicken in and sprinkle the pepper over the chicken. Now add the water and place lid on top and cook 5 hours. Remove chicken and place on cutting board, shred the chicken. On 4 large plates evenly divide the lettuce and then top with the chicken. Next, evenly divide the next 7 ingredients. Serve with pepper and your favorite lite dressing. YUM!
