Warm Arugula Salad With Avocado
1 cup red onion, chopped
5 oz fresh arugula, rinsed, dried
2 Tbsp garlic, chopped
1 avocado, finely chopped pulp
3/4 cup sun-dried tomatoes, chopped
Olive oil spray your wok, set to medium low. Throw your onion and garlic, saute for several minutes, then add the arugula, stir til slightly wilted. Now add your avocado, mix, then add the sun-dried tomatoes. Put lid on and turn to low, let cook 5 more minutes.
