Dark Chocolate Cupcakes, Gluten-Free

Ingredients


6 cups oats, pulse into flour in your food processor
1 tsp baking powder
3 large eggs
8oz applesauce, unsweetened
1 Tbsp vanilla
1 cup milk, fat free
1/3 cup brown sugar
10oz dark chocolate chip morsels
splenda, optional





Recipe Mix


Preheat oven to 350*. In a large bowl mix oat flour and baking powder. In another large bowl, whip your eggs for one minute on high speed with your hand mixer, now add applesauce, whip another 30 seconds, add vanilla, mix. Now add your flour mix to the egg mixture, then pour in milk and brown sugar. Mix with hand mixer til batter becomes thick, now mix in your chocolate chips by hand. Olive oil spray your muffin pans (12 muffins). Evenly scoop mixture into muffin pans, place in oven. Bake 20 - 25 minutes til tops are golden.Pop muffins out of muffin pan and place them on cooling tray. Sprinkle with splenda!! Delicious, you will want to eat them all!!
