Fajitas

Ingredients


2lbs venison back strap (or beef rib-eye)
crushed red pepper
black pepper
salt
olive oil
homemade refried beans (recipe on appetizer page)
roasted vegetables (recipe on vegetable page)
1 large tomato, chopped
lettuce, shredded
light sour cream
sharp shredded cheese
high fiber tortillas




Recipe Mix


Each piece of steak is apprx. 1lb. Rub olive oil on both sides, then sprinkle the peppers on each side. Now, very lightly dust a bit of salt on each side of steak. Place steak on grill, direct high heat and cook 7 minutes, flip another 7 minutes. Now, flip to sear both sides. Remove from grill and slice into strips, if you feel it is too rare for your taste, place back onto grill just for a few minutes each side. Now, layer your fajita: refried beans, roasted vegetables, tomato, lettuce, sour cream and sharp cheese. Delicious!!
