Gluten Free Cornbread Muffins

Ingredients


1 cup cornmeal
2 cups quick oats, pulse into flour with your food processor
1 Tbsp cinnamon
2 1/2 tsp baking powder
8 oz applesauce, unsweetened
2 bananas, pureed
3/4 cup fat free milk
3 Tbsp egg whites
Splenda, optional




Recipe Mix


Makes 12 large muffins. Preheat oven to 350*. Generously olive oil spray your muffin cups. Mix all ingredients in order listed in a large bowl, evenly scoop batter into muffin cups. Bake 25 - 30 minutes til golden on top. Pop muffins out of trays and place on cooling rack. Sprinkle with Splenda, Yum!!
