Healthy Low-Fat Spinach Pie Baked With Lobster & Zucchini :P

Ingredients


1 cup onion, chopped
2 Tbsp garlic, chopped
16 oz lobster, chopped
3 Tbsp lemon juice
10 oz Frozen spinach, thawed, rinse well, squeeze excess water out or fresh spinach (saute fresh large bunch of spinach in a bit of olive oil til wilted)
15.5 oz black beans, drain, rinse well
2 eggs
1 tsp tumeric
1/2 cup jalapenos, chopped






Recipe Mix


Preheat oven to 375 and olive oil spray your deep pie dish. Olive oil spray your frying pan and place over medium heat, add onion and garlic, saute for several minutes while mixing. Now add lobster and lemon juice, mix well, turn heat to low and let mixture simmer for 10 minutes, stir often. In large bowl mix the spinach, beans, eggs and tumeric, add the jalapenos if you want to. Now add the frying pan mixture, mix well, scoop into pie dish and cover with foil. Bake 44 minutes, Delicious!!
