Meatless Stuffed Peppers

Ingredients


2 avocados, mashed
8 oz baby bella mushrooms, chopped
3 large tomatoes, chopped
2 tsp paprika
1 tsp thyme
1/2 tsp tumeric
pepper
3 large peppers, halved, remove stems



Recipe Mix


Preheat oven to 350*. In large bowl, mix the first 6 ingredients by hand, pepper lightly. Place the pepper halves on the bottom of a olive oil sprayed baking dish and evenly fill the pepper halves with the mixture. Bake covered for 44 minutes, remove cover, bake another 8 minutes. DELICIOUS!

Note* add 1/2 cup Greek nonfat plain yogurt to mix if you would like a creamy filling
