Italian Spelt Bread With Pesto Dip

Ingredients


2 Tsp Yeast
1/4 Cup Water
1/4 Cup Olive Oil
3/4 Cup Water
2 Tbsp Applesauce
3 Cups Spelt Flour

Preheat oven to 350. Mix yeast with 1/4 cup of water and let sit for 10 minutes, allowing it to become foamy. Then add rest of the ingredients, add a little water if needed til dough is a nice firm dough ball. I wet my hands then and just knead in bowl for 4 minutes. Next, place the dough in a large olive oil sprayed bowl. Cover with plastic wrap and let sit 2 1/4 hours. Then knead again in hands for several minutes and divide dough into two even balls. Line a baking sheet with parchment paper and spray with olive oil spray. Now gently shape each ball into a log, around 11" x 3" in size.
Loosely cover with plastic wrap and let sit for 1 1/4 hours. Slice a 1/2" deep line down center of each log. Bake for 35 minutes, should be golden on top. Careful not to over bake. Should have a light texture on inside, and crispy crust.
