Corned Beef Frittata, leftover corned beef
2 cups onion, chopped
3/4 lb lean cut corn beef, chopped
8 slices swiss cheese
32 oz carton egg substitute
3/4 cup egg whites
1 cup sauerkraut, rinsed, squeezed
Preheat oven to 425*. Generously olive oil spray your 13 x 9 baking dish. Mix all ingredients in a large bowl, pour into baking dish. Tent loosely with foil, bake 54 minutes. Open oven and remove foil, pull rack slightly out and let sit for 10 minutes before serving. Delicious!
**Note, insert fork into middle of frittata before letting it sit 10 minutes, should not be runny. If so bake a little longer!
