Meatless Monday Zucchini Ramekins
3 cups zucchini, finely chopped, squeeze out excess liquid
1 tbsp garlic, chopped
1 1/2 onion, chopped
1/2 cup skim parmesan
2 large eggs
Preheat your oven to 350. Olive oil spray 6 ramekins, and mix all ingredients in a large bowl. Evenly divide the mixture into the ramekins, bake 34 to 40 minutes til golden on top. Serve with pepper and crushed red pepper.
