Moist Chocolate Cupcakes, Great After School Treat

Ingredients


1 -16.5 oz box french vanilla moist cake mix
1 - 2.1 oz packet sugar free - fat free chocolate pudding mix
1 cup fat free milk
2 tsp vanilla
3 large eggs, beat together in small bowl
3.2 oz unsweetened applesauce




Recipe Mix


Preheat oven to 350*. Generously olive oil spray 2 - 6 count large cupcake baking pans, olive oil spray each cup generously. In large bowl add all the ingredients and beat hand held mixer for several minutes, texture will be thick like a heavy mousse. Now evenly scoop the batter into the 12 cupcake tins. Bake 16 minutes, then lay a sheet of foil loosely over each tray, bake another 6 minutes. Do the fork test to make sure no batter is left uncooked. These are delicious without frosting!!
