Roasted Chicken With Brussel Sprouts, Spinach & Cancer Fighting Onion

Ingredients


3 large boneless chicken breasts, not frozen
1 cup water
6 cups fresh spinach leaves
6 cups brussels sprouts ( I used ones from my garden)
1 large sweet onion, chopped
1 cups cherry tomatoes
1 Tbsp Basil
1 tsp Pepper
Olive oil



Recipe Mix


Preheat oven to 350*, olive oil 15 x 9 baking dish. Place chicken on bottom of dish, pour water in, then add the spinach leaves, spread out nicely. Now spread out the brussels sprouts out over the spinach then add the onion on top of dish and toss the cherry tomatoes on top. Next, sprinkle the basil and pepper over the dish, then drizzle with olive oil. Tent with foil and bake 44 minutes, remove from oven, flip the chicken and toss around the ingredients, place foil back on top and bake another 20 minutes. Delicious!!
