Skinny Banana Oat Muffins
8 cups regular oats
4 Tbsp cinnamon
3 cups water
4 medium bananas
2 - 6 ct. large muffin baking pans
Preheat oven to 350* and olive oil spray the baking pans. In large bowl, add oats and cinnamon then add 2 cups of water, mix by hand to blend...add more water as needed / mixture should be moist but not watery. Form 12 large balls, again batter should be moist not watery, you should be able to form a large ball. If you cannot form a ball without it falling apart due to too much water, just add some more oats. Place the formed oat balls into the olive oil sprayed muffin pans. Bake for 44 minutes. Delicious without the fat!!
** These are perfect breakfast, dessert or just a few bites here and there to fight off hunger pings & pangs :)
