Slow Cooker Golden Beets With Spinach & Tomatoes
2 large golden beets, peeled, cut into 1/2" slices
2 cups tomatoes, chopped
10 oz frozen spinach, thawed, rinsed well, squeeze excess water out
1 Tbsp garlic, chopped
1/2 tsp ginger
Olive oil spray your slow cooker and set to high. Prep all your ingredients, then place beets into the slow cooker. Now mix the remaining ingredients in a large bowl and scoop over the beets. Place lid on top, set temperature to low and let cook 2 hours, DELCIOUS!
