Slow Cooker Skinny Chicken Paprikash

Ingredients


3 large boneless chicken breasts, 2" pieces
2 cups onions, chopped
2 Tbsp garlic, chopped
1 large red pepper, chopped
2 Tbsp paprika
3 cups water
2 cups nonfat Greek plain yogurt

2 - 10 oz mushrooms, remove stems, rinse well
2 LARGE apples, you should have at least 4 cups of large pieces

Recipe Mix


Set your crock-pot to high, olive spray the inside. Place chicken, onion, garlic, red pepper and paprika into crock-pot, now add 3 cups of water, mix well. Place lid on top and cook for 4 hours on high. Add yogurt, mix well and put your lid back on. Now set your slow cooker's temperature to warm.
Olive oil spray your frying pan and set burner to medium/high and place your mushrooms and apples into pan, pepper til your desire, saute til apples start to show some discoloration from heat, about 10 minutes. Remove frying pan mixture from heat. To Serve, scoop apple / mushroom mixture onto a serving bowl then scoop the crock-pot mixture over apple/mushroom mix.
Note**This comes out with a soup base texture, if you want it to be creamier, only use 2 cups of water and add 1 extra cup of yogurt. And, add more paprika if you want a stronger taste. Delicious, you will be surprised!!
