Spicy Chicken Vegetable Soup
3 large boneless chicken breast
3 large green peppers, finely chopped
2 large sweet onions, finely chopped
6 large tomatoes, finely chopped
3 Tbsp Fresh Chives, chopped
2 Tbsp Parsley
2 Tsp pepper
1 Tbsp basil
2 tsp Tumeric
Olive oil spray a large crockpot and set temperature to high. Prep all your ingredients then place the ingredients into the crockpot. You may need a little bit more water or less. The water should just cover the ingredients, mix well. Place lid on top and turn heat to low and let cook 5 hours. DELICIOUS!!
**I like to add 4 large banana peppers sliced along with 2 tsp crushed red pepper for friends who like my soups with a little heat. Also, serve with a dollop of Greek nonfat plain yogurt, yum!
