Stuffed Banana Peppers, Perfect Recipe For Meatless Monday

Ingredients


7 Banana Peppers (Use Cubanelle For No Heat)
2 Cups Of Chopped Pineapple
2 Cups Finely Diced Broccoli
1 Cup Diced Onions
1 Tsp Dill
1/2 Cup Nonfat Plain Greek Yogurt
1 Cup Raw Almonds



Recipe Mix


Preheat oven to 350. Olive oil spray a 13 x 9 baking dish. Slice your peppers down the middle of one side and lay on bottom of baking dish. Next, mix all the ingredients in a large bowl, except the almonds. Then fill each pepper with mix, spoon extra filling around peppers. Bake for 45 minutes covered with foil. Then remove foil, evenly sprinkle almonds over the peppers and bake for another 10 minutes. A Delicious & Easy Recipe!!
