Garlic Mashed Potatoes
8 Yukon gold potatoes, peel, cut into 1/4's
4 cloves garlic minced or 4 tsp garlic powder
Place potatoes into a pot, fill with water and bring to boil. Let boil for several minutes, stir, turn heat to low and place lid on top. Let simmer for 20 minutes, check potatoes for tenderness.. Drain, place potatoes back into pot add garlic and drizzle with olive oil. Use electric hand mixer to mash, add more olive oil or garlic to taste.
