Tomato Avocado Crusted Eggplant

Ingredients


1 eggplant, peeled 1" slices (should get about 8 slices in an average size eggplant)
1 large avocado, pureed
1 large egg
2 Tbsp spicy mustard
1 Tbsp parsley
1 Tbsp chives
1 Tbsp garlic, chopped
2 large tomatoes, sliced
olive oil
pepper



Recipe Mix


Preheat oven to 350* and olive oil spray your cookie sheet. Lay your sliced eggplant on baking sheet. In a large bowl combine the next 6 ingredients til blended nicely. Evenly top your eggplant slices with the mixture. Now place a slice of tomato on top of each eggplant slice, pepper lightly and drizzle with olive oil. Baked uncovered for 50 minutes. ABSOLUTELY DELICIOUS!
