TVP Meatless Vegetarian Tacos

Ingredients


2 cups chopped onion
3 Tbsp garlic, chopped
1 tsp cumin
1 Tbsp paprika
1 Tbsp oregano
1 tsp cayenne
15 oz black beans, drained, rinsed well
2 cups TVP
Water



Recipe Mix


Olive oil spray your slow cooker, set temperature to high. Olive oil spray a large frying pan, set your temperature to medium high heat and add your onion & garlic and let saute for several minutes, stirring. Next, add all your spices, stir to mix ingredients well. Turn your temperature down to medium low and let simmer for several minutes. Add your beans to slow cooker then add the mixture from your frying pan, mix ingredients. Now olive oil spray your frying pan again and add your tomatoes, let those warm up several minutes, scrap the bits on bottom of frying pan with tomatoes. Next, add the TVP to slow cooker then the tomatoes from the frying pan. Lastly add just enough water to cover the ingredients in your slow cooker. Mix the ingredients in your slow cooker, cook on low for 6 hours. Scoop and serve the seasoned TVP once it is cooked in your favorite wrap, I like lettuce cups. Top with some cheese and nonfat plain Greek yogurt. I also added some sliced jalapenos on top of my wraps, DELICIOUS!!
