Turkey Zucchini Lasagna

Ingredients


2 Medium Zucchinis Peeled Shredded
2 Tbsp. Olive Oil
2 Large Chopped Onions
3 Tbsp Chopped Garlic
1 Lb Ground Turkey Cooked (Or Canned Black Beans For All Veggie, just drain and rinse well)
1 Tbsp Oregano
1 Tbsp Pepper
1 Tbsp Parsley
1 Tbsp Basil
1 28 oz Crushed Tomatoes, drain
1 15 oz Fat Free Ricotta Cheese
2 Avocados, mashed
1/4 Cup Egg Substitute



Recipe Mix


Preheat oven to 350*. Saute onion & garlic in frying pan with a drizzle of olive oil for 5 minutes over medium heat, then add the turkey, mix well. Now add all your spices and crushed tomatoes, stir to mix and turn heat to low. Place lid onto frying pan and simmer 10 minutes. While meat mix is simmering, mix ricotta cheese, avocado and egg until creamy (I use my hands to blend this, so no chunks of avocado). Olive oil spray a 13 x 9 baking dish and place the zucchini on the bottom of baking dish. Layer the meat mixture evenly over the zucchini, and follow up with the cheese/avocado/egg mix spread evenly over the meat mixture. Bake for 40-50 minutes! DELICIOUS!
