Zucchini Cranberry Oat Muffins, No Fattening Butter or Oil
8 cups reg oats
2 cups pureed zucchini (peeled)
1 cup craisins, less sugar brand
Preheat oven to 350* and olive oil spray a 12-count large muffin tray. In large bowl mix oats, zucchini, craisins, now add enough water so that mix is sticky - moist, but not to wet. You should be able to form a baseball size muffin and it should be able to hold the shape in your hand. Make 12 balls and place in olive oil muffin tray and bake 44 minutes. DELICIOUS!
